Any aspiring young person who wishes to join the catering profession should have a copy of this book. It is thorough, well researched, modern and expresses all the values which surround the British Culinary Arts tradition. This is a valuable edition to any ones cookery book collection. A real antidote to the too-slick Nigella/Gordon coffee table food-porn sort of book, which I imagine people buy to look at but rarely actually cook from. This is inspired by the power food has to bring people together, especially people from diverse cultures and the book captures this beautifully, with photos that feel real and capture the imperfections of real cooking.
It has a homely quality to it and incorporates nice stories by those who've contributed recipes. It's clearly intended as a book meant to end up with food stains and finger marks on the pages. Lovely

I am genuinely excited about this book! When I first received it, I had a thoroughly good look through it and was especially impressed with the chefs profiles and the quality of the photographs which support the text. The many pictures and recipes demonstrate an excellent level of culinary competence. The authors have a real feeling for all things culinary and have created a set of books which should be recommended to all young and aspiring chefs. The book is written with care and diligence with detailed observations and well written explanations of the methods, which is so important when writing a culinary manual. I agree with most of the above comments on this book. It certainly opened my eyes to the exhaustive process of wine making and French Beaurocracy! I certainly shall not quibble about the price of a good wine again!!!
Patricia is a complete inspiration and a very good writer.
I am so pleased to see (from her website) that she appears to be going from strength to strength.
She describes the people in this book so well that when there is a death, you feel it, and the news that one in particular died made me cry.

Oz Clarke tells it like it is & thankfully seems to respect his reader regardless of whether they know their Pouilly Fume from Pouilly Fuisse.
If you're planning to stock up & take a foray into the wonderful world of (decent) wine, this is as good a starting point as any. However, if you're looking to do some research for wine exams or use as a reference book, then there are other, more weighty tomes out there which do a more exact job.
But, back to the book in hand. This books has interesting Food/Wine notes & also a decent synopsis of the various countries of origin. The A-Z of wines, grapes etc is pretty good & although there are perhaps a few missing (if you're feeling particularly pernickety)isn't ... Read More:

Let me use that old cliche, if you only buy one book on home wine-making then buy this one.
I have seven books on making wine. This is the one I always turn to first and the only one I have read cover to cover.
It is very readable, the only winemaking book I have with a sense of humour. It covers almost everything you could want. From the real basics, to really quite advanced stuff. It even has a potted history of winemaking.
But most of all the recipes never cease to turn out top notch wine, from bog-standard apple through unusual ones like kiwi to the use of herbs and spices.

I really enjoyed reading this straight through, cover to cover. Jay McInereney writes beautifully and shares his personal taste (and insights) on the subject of wine in a delightfully charming and under stated manner.
Despite the fact that I probably have similar tastes and views as the author on the subject matter this should not deter a prospective reader with interest and empathy for the greatest intoxicant - Wine !
McInereney has demonstrated in this book why wine provides intellectual as well as sensual pleasure that leads us into the realms of " geology, botany, metreology , history aesthetics aand literature "
