Here is a chef who is unbelievably original and inventive with his food. Being a veggie for 15 years means I am tired of staples such as pasta with tomato sauce and spinach lasagne. Denis Cotter makes veggie cooking glamorous and exquisite with new combinations or completely new, original ingredients. The Spring and Summer Cooking section of Paradiso Seasons (yes, it is the same book but released in 2 volumes) bursts with asparagus, broad beans, courgettes, halloumi, rocket, tomatoes...readily available and always delicious ingredients, meaning you have no excuse not to make wonderfully original veggie meals to wow your guests with or just to treat yourself. Having purchased the same authors' excellent What to Drink with What You Eat, I was excited by the prospect of getting my mitts on this new offering. However this by comparison is somewhat disappointing, though still quite useful.
Firstly, it suffers from a problem which the aforementioned work also suffered from, namely that if item A references item B, then item B does not necesarily reference item A in return. Whilst in the earlier work this was not a major problem (partly because it was on a smaller scale and also because you don't often choose the drink first then the food afterwards), here it seems to be on a larger scale. After reading countless number of cookbooks where the recipes go on and on, it's refreshing to come across Ms. Calder's succint recipes. Whilst a few of the recipes may not be for the complete novice, most could be managed by anyone with a bit of a brain and some coordination ;-)
The head notes are witty and engaging, making you want to cook this dish or that one. And she has clearly grasped the importance of the little things that the French value, as her page on salad shows.
While many other cuisines are more fashionable at the moment, this book shows that French cooking can be modern, delicious and most importantly, imminently do-able. Get this book, you'll enjoy it for its recipes and more rarely in the culinary literary ... Read More:
